Is there a way to automatically update Instrument in strategy template XAML files, or has someone already built/seen functionality that looks like this?

Thanks for your post.
There are no documented or supported methods for automatically updating the instrument in a strategy template XAML file.
You would need to update the XAML file manually, or you could consider saving a new strategy template with the new instrument applied to the template.
