After calling CancelOrder(myOrder), is it guaranteed that myOrder will be "null" if this call is successful?

No, that will simply cancel the order associated with the ID stored in myOrder. For that value of myOrder to be reset to null, you would need to reset the variable to that manually, preferably in OnOrderUpdate once you get an update the order has been cancelled as in the example in the documentation:
