Can I make the SMA indicator look back x bars?

It already does that.
That's exactly what the '10' in SMA(10) means.
The '10' is the period, it represents the number
of bars to lookback when deciding how many
bars to include in the calculation.
The number of bars is a 'moving window', since
when a new bar closes, the oldest bar is dropped
from the calculation -- the 'moving window' is always
moving to the right -- that's why these kinds of
indicators are called moving averages.
All indicators that come with NinjaTrader, including
the SMA indicator, will work on any kind of chart
type -- so SMA(10) works exactly as you'd expect
on a 1, 5, or 10 minute chart.
