What is the purpose of Sub Account? What can and can't we do with these accounts?

While I wouldn't be able to discuss at length, the primary purpose would be to allow you to have an additional account to trade with. The reason a Sub Account would be required in that case is because each legal entity may only have a single account of the same type. Sub Accounts allow a user to have a secondary account.
