The brush can be specified as the first parameter in AddPlot().
AddPlot(Brush brush, string name)

Or can be specified as the first parameter to a Stroke() method call.

Can I confirm are you asking about specific properties of the OrderFlowVolumeProfile?

The OrderFlow VolumeProfile currently is not exposed for NinjaScript use in a documented way so its properties could not be modified through code. This item would only be used by manually applying it to a chart.
