Creating a third value for a custom bar type

How can I add a third value for a custom bar type? I know that I have value and value2. Could you provide and example or guide me as to collect a third value from the UI and then use this value.

Currently, there are only those two properties for bar types and custom chart styles. There exists a feature request to support custom properties for these ID# SFT-1269, I will add a vote to this for you.
