How would I construct a template from 1800 NY time to next day 1800 NY time?

The template is already there. Open the session manager and select the template Nymex Metals / Energy ETH. The template shows five trading days with trading times from 18:00 to 17:15 next day. You can change the hours by entering different times and saving the template under a new name.

When you build a new template, please make sure that you do not include the technical break (exchange closed) in the trading time.

Additionally, you can build your own template without having to change a default one in the Session Manager...
