Managing Historical Data

I want to delete many of the ES 03-xx years of historical data.

I'm doing a lot of backup and restore these days due to running on different computers and it takes a long time I'm thinking due to the amount of data it is backing up and restoring.

I need to backup the data I've recorded daily but not all the other historical data.

How do I delete say, ES03|06|09|12 data starting 2009 and older for instance?
