Not the extra time that for some reason NT is cutting out 1 hour before the end of the session time set in the session manager on BoofisNT chart.

Do you guys understand the problem? that the time and data displayed does not match the session manager on BoofisNT's chart.
Why is that so?

There could be corruption in the cache folder which causes data not be loaded properly. Please shut down NinjaTrader and navigate to the folder below.
C:\-->Users-->*Windows user account*-->Documents-->NinjaTrader 7-->db
Delete the cache folder.
Start NinjaTrader and check if data is loaded as per the start and session times of the session template that is used.

Deleted the cache folder and am still getting the same chart. The template (HKFE NT provided) seems to be showing on the chart as 11:15 through 2, break till 3 and then finish the session at 6:15 (corrected). Now the only issue will be to get the data to line up with it's correct time. I think you've done it Jason! Looks like it's loading the right data and the session template is working. Fingers crossed it stays.
