How can I set up (if possible) a NYSE tick chart in NT?

Are you asking in terms of the TICK index or the data interval, tick?

In either case, which data provider do you use with NinjaTrader?

Thanks for clarifying.

Unfortunately, PFG does not offer this particular symbol (only futures and forex are available with this provider). That said, you could look in to service with a secondary provider like BarChart, eSignal, IQ feed or Kinetick where this data would be available.
