Is NT as stable on Win XP Pro x64 as it is on x32? I would like to upgrade to x64 to utilize my 8GB of available RAM but need to know if NT will work properly.

Yes, NinjaTrader is supported on 64 bit operating systems as well.
If you install NinjaTrader 7 on a 64 bit operating system you will see two icons to start NinjaTrader - one 64 bit and one 32 bit. Please double click the icon that includes '64 bit' to run NinjaTrader in 64 bit. The other icon will run NinjaTrader 7 in 32 bit.
In addition, please see the link below which lists the data feeds supported in 64 bit.
