Do the paid charts have datahistory or do you start all over when you open up a chart like free version?

All charts can have historical data. If you data feed provider supports historical data, you can retrieve historical data from them. You can verify at the link below.
If not, you can save all incoming chart data in the database, so it will re-appear on future requests. Go to Tools-->Options-->Data-tab and enable 'Store real-time bar data'.
