To Pin it to the top of the list like you have with your first 2 instruments.. To delete an instrument from the list, just over hover it, and click the delete key..

The new instrument list keeps track of your most recently used instruments, and the icon in question will allow you to save any desired instruments to the top of that list if you have instruments you want to use frequently.
